The choice of race is less flexible in FFTA series, as most of the jobs only come among one race. If you need that job, you'll need that race. So, you will probably have a fairly fine racial make-up in your team.
Some jobs are available for multiple races: Black mage, White mage, etc. In that case, preference should be given according to which aspect the race is best at. A Nu Mou black mage can deal higher damage, but they would move a bit slower and with less movement capability, if that's of your concern, maybe you'll prefer a Moogle black mage.
The other major implication is about law and clan ability. There are racially and gender- based laws and clan privilages, make sure to check them before you start the Fight!
